And these keto roll-ups aren’t your average lettuce wrap! No, they offer crispy cheese on the outside with a delicious filling that pairs perfectly with some of our favorite dipping sauces. Enjoy them warm for a simple work-from-home lunch or for an after-school snack. Cool, they’re great for the lunchbox or for hitting the trail. The Sandwich Roll-Up is a nice break from the trail mix when you’re out hiking. Throw them in an insulated lunch bag with a light ice pack, and you’re good to go.

This recipe suggests making them in the oven, but a toaster oven will also work. Use the ideas below as inspiration to come up with your own meat, cheese and sauce creations.

Italian Cheese Roll-Ups

Preheat your oven to 375°F (190°C). Line a sheet pan with parchment paper.

Arrange your paneer slices on the griddle. Layer the pepperoni or salami with a leaf or two of basil in the center of the cheese and sprinkle it with the Italian seasoning. Place the sheet pan in the oven for 5 to 7 minutes, or until the cheese begins to crisp on the outer edges.

Remove from oven and quickly and carefully roll cheese diagonally until each is in a cylinder roll-up shape. Use a spatula to prevent burning your fingers.

Once the cheese has cooled slightly, cut in half and sprinkle with more Italian seasoning, then dip in your favorite Primal Kitchen marinara sauce!

Arrange your paneer slices on the griddle. In a small bowl, whisk together the chicken breast, celery, ranch dressing, and Buffalo sauce to taste. Place a large piece of chicken mixture in the center of each piece of cheese.

Place the sheet pan in the oven for 5 to 7 minutes or until the outer edges of the cheese are crispy. Remove from oven and quickly and carefully roll cheese diagonally until each is in a cylinder roll-up shape. Use a spatula to prevent burning your fingers.

After the paneer cools down a bit, cut in half and garnish with chopped green onions. Dip in Buffalo Sauce or Ranch Dressing!
